The Artisan deck ovens by Doyon are electric high performance ovens with an energy miser/governor feature. Available with 1-4 stone hearth bake decks. The 4T series decks each have a capacity for (4) 18"x26" pans. 8" deck height standard (may request varied deck heights). Each deck has digital electronic temp control with 3 zones. Features manual self-contained steam injection on each deck. Exterior baking chamber for each double pan deck dimensions are 14 7/8"H x 75"W x 53-1/4"D. Interior deck dimensions are 56"W x 37"D (37" depth to accommodate more pans). 208V, 3 phase standard. 240V and 480V available.
The 4T, four pan ovens can load 4 sheet pans sideways. Low temperature range (250-300 degrees F) recommended for pastry, croissants, danish, cookie, cinnamon roll, biscuits, brownies. Medium temperature (350-425 degrees F) recommended for baguettes, bread, rolls, bagels, pies. High temperature range to 575 degrees F recommended for pizza, pita bread, and high water absorption ratio bread.

We recently purchased this oven over the summer for our bread baking operations, and have to say that we are very happy with not only the oven, but also the service provided by Margie at ABest.
We needed the oven in a very short amount of time, and although everyone else told us the oven would take much longer to manufacture, Margie took the time and care to find one for us within our deadline.
The oven itself is very great, top of the line, but one thing to note is that each deck has 3 separate stones inside of it, rather than 1 huge piece.
