The Artisan deck ovens by Doyon are electric high performance ovens with an energy miser/governor feature. Available with 1-4 stone hearth bake decks. The 1T series decks each have (1) pan capacity (18"x26" pans. 8" deck height standard (may request varied deck heights). Each deck has digital electronic temp control with 3 zones. Features manual self-contained steam injection on each deck. Baking chamber is 15-5/8"H x 35-3/4"W x 46-1/2"D. Interior deck dimensions are 18-1/2"W x 30"D. 208V, 3 phase standard. 240V and 480V available.

Low temperature range (250-300 degrees F) recommended for pastry, croissants, danish, cookie, cinnamon roll, biscuits, brownies. Medium temperature (350-425 degrees F) recommended for baguettes, bread, rolls, bagels, pies. High temperature range to 575 degrees F recommended for pizza, pita bread, and high water absorption ratio bread.
