Heating: 80F – 185F, Proofing: 80F - 135F. 3" adjustable ledge spacing with 17 sets of universal angle ledges standard. Holds standard 18" x 26" bun pan (end loading) or 12" x 20" hotel pans (side loading) Pan/Tray. UL Sanitation Listed.
