Doyon's unique way of sheeting dough through a set of angled rollers is a brilliant design. The oblong shape of the dough coming out of the first roller, falls into the second roller at just the right angle to make it round. (sort of round anyway) Sheet dough up to 12" in diameter to a uniform thickness in seconds with a single pass. Sheet many types of dough including pizza dough, cinnamon rolls, puff pastry up to 12" (305 mm). Simply drop a floured dough ball at the top and pick the sheeted dough piece at the bottom. One operator can make up 250 pieces per hour. Simple, fast and economical.
